PIZZA CAKE
This may be the BEST pizza I've ever had, cheese on cheese, it was almost magical. If you have anyone that doesn't enjoy cake (sadly there are some out here that may) and would prefer something savory, this would be the best cake to make for them!
Pizza Cake Recipe
Dough
2 1/4 tsp yeast
1/2 tsp brown sugar
1 1/2 cup warm water
1 tsp salt
2 tbsp oil
3 1/2 cup of flour (depending on how wet the dough is)
Topping:
14 oz pizza sauce
3 cups of mozzarella (use a grater to shred it)
1 cup of pepperoni
Directions
Dissolve the yeast in a bowl with some of the water, and add some of the flour.
Add in the oil, brown sugar and water, gradually adding the flour (you may not have to use all of it) Just as the dough is about to form add in the yeast, knead for 6-8 minutes. In a clean large bowl place the dough in there and cover and let it rise for 1 hour or until double.
Punch down the dough, cut out 3 - 4 6 inch circles out, pre bake for 8 minutes.
Roll out the dough into a long rectangle enough to cover the sides of the 6 inch cake pan and the tops slightly leaning over the tops.
Line the cake pan with parchment paper, spray with some oil, and sprinkle some cornmeal.
Add the prebaked pizza crust onto the bottom of the pan, trim with a knife if necessary. Top with pizza sauce and mozzarella cheese, and pepperoni repeat this order until you've reached to the top, roll the sides of the dough in. You may or may not have an extra crust
Bake at 425 F 20-25, but around the 20 minute mark if you have to continue baking, cover with foil, or the pepperoni would burn, but I recommend maybe adding pepperoni in the last 10 minutes of cooking
Note: I used a spring form pan
