$5000 Starter Dough Bread Recipe




This is probably so far my family's favorite bread recipe and I've made quite a few over the years. My mom says this reminds her of the soft rolls made from the Chinese Bakery.

5000 Dollar Starter Dough Recipe

Starter Dough
  • 210 grams bread flour
  • 90 grams cake flour
  • 24 grams granulated sugar
  • 6 grams yeast
  • 240 grams water

Main Dough
  • 210 grams bread flour
  • 90 grams cake flour
  • 96 grams granulated sugar
  • 1 1/2 teaspoon salt
  • 24 grams milk powder
  • 90 grams egg
  • 54 grams water
  • 72 grams softened unsalted butter
Topping
  • 1 egg+ 1 tbsp water for egg washing
  • 2 tablespoons melted butter for brushing on the final product

Directions
  1. First we start off with making the starter dough. In a large bowl add in the yeast, handful of the bread flour to feed the yeast. Add in some of the water, just enough to dissolve the yeast. Mix this with a whisk or fork until it dissolves. Add in the rest of the bread flour, add in cake flour, sugar, Add in the rest of the water, stir until this comes together and cover and let this rise until it has a honey comb like texture this takes about 1-3 hours.
  2. For the main dough recipe you basically combine together all these ingredients I listed under main dough, egg water, sugar, bread flour, cake flour, salt and milk powder
  3. Its okay if it looks sad and lumpy, just add in our starter now and knead this for 6-8 minutes, use a timer if you need to. It’ll be pretty exhausting but you can throw it into a kitchen aid mixer. After it starts coming together add in the 72 grams softened unsalted butter. 
  4. Cover and let this rise for 1-3 hours or until doubles in size. Release the gas in the dough by gently punching in down and kneading any excess gas. Divide the dough in half taking one of the pieces roll it into a log and divide it into four pieces, roll each of the pieces into a rope, and use flour as needed. Tie one of the ropes into a knot.
  5. I like to move it so the legs are dangling and tuck one of the legs over and into the center, and the other legs back and tuck it into the center.
  6. Place this in either an 8 x 8 inch square brownie pan or a 8 inch circle pan well greased with oil
  7. Let it rise until double in size, covered loosely with saran wrap, and be sure to give it room to rise in the pan
  8. Make an egg wash with 1 tbsp of water mixed into 1 egg. Brush into onto the buns be sure to get all the sides by turning the pan around to face you
  9. Bake at 350 F for 30 minutes bread can’t be tested by the color alone so you may have to test the internal temperature and make sure its 190-200F
  10. The last 10 minutes or so when it was the color I wanted I did cover it with some foil to prevent over browning
  11. Melt 2 tbsp of butter in a microwave at 15 seconds intervals. Brush onto the hot bread generously.
