Gingerbread Rilakkuma Cookies~


Happy January 1st of 2015! Hope this year will be a fun year filled with more baaaking~

Okay I was supposed to bake these around Christmas time~ But I got kind of lazy and dragged it around new years eve to the first. I don't remember ever baking gingerbread cookies before, and didn't really know what to expect from the dough. If the imprints from the cookie cutters were going to stick, or if the shape would hold well. Everything in the end turned out fabulous~ I used some icing by mixing powdered sugar and 2-3 drops of water to make the white icing and piped it onto the belly and the mouth. I piped melted chocolate chips for the mouth and eyes using a cone parchment paper. I wassooo not lazy to grab yellow food coloring to make the ears, but wanted to be *festive* and grabbed yellow stars for ears and glued it on using the same white icing. Recipe for Gingerbread Cookies

Ingredients
1/2 cup butter
1/2 cup sugar
1/2 cup molasses
1 egg yolk
2 ups sifted all purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ginger
1/2 teaspoon ground nutmeg

Directions
1. Cream together butter, and sugar.
2. Add the rest of the ingredients and mix
3. Wrap in saran wrap, chill in the freezer until firm or 30 minutes.
4. Roll out, cut out with cookie cutters.
5. Bake 350 F for 8-10 minutes
6. Decorate with icing and sprinkles~

For Decoration:1 cup powdered sugar
2-3 drops of water
Yellow star sprinkles
