Recipe for Stacked Wedding Cookies Homemade
Sugar Cookies
Ingredients
- 1 Cup Unsalted Butter
- 1 1/4 Cup Granulated Sugar
- 1 Egg
- 1 1/2 Teaspoons Vanilla Extract
- 3 Cups All Purpose Flour
- 1 1/2 Teaspoons Baking powder
- 1/4 Teaspoon Salt
Directions
- In a stand mixer with a whisk attachment, cream together 1 cup of unsalted butter with 1 1/4 cup of granulated sugar. Add in the egg and vanilla extract, and mix. Add in the 3 cups all purpose flour, 1 1/2 teaspoon baking powder with the salt.
- Roll out in between parchment paper, or on a Silpat mat. Place onto a half sheet tray, saran wrap completely. Chill for 20-30 minutes.
- Cut out 3 different sizes of cookies using a circle cutter for each tier.
- Bake at 350°F for 8-12 minutes or until lightly golden. Cool for 5 minutes on baking tray before removing from the pan to prevent carry over cooking.
Royal Icing
Ingredients
- 3 Cups Powdered Sugar
- 1/4 Teaspoon Cream of Tartar
- 2 Egg Whites
- Few Drops of Water
- Food Dye
Decorations
- Sugar Pearls
Directions
- In a stand mixer with a whisk attachment, whisk together 2 egg whites, 1/4 tsp cream of tartar, and the 3 cups powdered sugar until stiff. Add in a few drops of water until reached desired consistency, or pipe-able consistency. Add in food coloring of choice.
- Once the cookies are completely cool, you can begin icing them. Outline each cookie with a small piping tip. Fill each cookie with icing. Once the icing has all harden, you can start stacking each tier onto the cookies, glueing them together with leftover icing
- Glue each sugar pearls individually to decorate the cookies.
