Pumpkin Cookies with Cream Cheese Frosting
1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground pumpkin spice
1/2 teaspoon salt
1/2 cup butter, softened
1 1/2 cups white sugar
1 cup canned pumpkin puree
1 egg
1 teaspoon vanilla extract
Directions For Cookies:
1. Mix together dry ingredients 1/2 cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 2 teaspoons ground cinnamon, 1/2 teaspoon ground nutmeg, 1/2 teaspoon pumpkin spice, 1/2 tsp salt.
2. Mix together wet ingredients: Cream 1/2 cup butter, 1 1/2 cups white sugar, mix in 1 cup of pureed pumpkin, 1 egg, 1 tsp vanilla.
3. Combine flour and wet ingredients, adding the flour in 1/3 at a time. Mix until moistened.
4. Bake 8-15 mins 350F
Icing:
2 cups confectioners' sugar
3 tablespoons water
1 tablespoon melted butter
1 teaspoon vanilla extract
3 tbsp cream cheese
Directions:
1. Combine together all ingredients. Drizzle over cookies with a piping bag or fork.
1. Mix together all the flour, spices, salt, baking soda, baking powders. Make sure the bowl is big enough. |
2. Cream together the butter and sugar. Mix in the pumpkin puree, egg, vanilla extract, |
3. Scoop onto trays, pat down to flatten. Bake 8-15 mins until brown at the bottom at 350F |
4. Prepare some nommy frosting, I add a bit of cream cheese and cinnamon together with the powdered sugar, water and butter. |
