Super easy and delicious Kimchi Soup! Tastes just like the ones from the Korean restaurants. I was so confused to see that this soup was so easy to recreate. The key ingredient is the chili pepper paste that makes the broth super yummy! I literally have no reason to ever go to a Korean restaurant ever again. Kimchi Soup Recipe
1 lb Nappa Cabbage Kimchi, cut to bite sized pieces
1 lb Pork, Cubed
1.5 lb Tofu, Cut into rectangles
4 Cups Water
2 Tbsp Gochujang, Chili Pepper Paste
2 Tsp Sugar
2 Tbsp Oil
Enoki Mushrooms
Directions
Add oil into a dutch oven. Add the meat. Add kimchi, water, pepper paste, sugar.
Bring to a boil, and then simmer 45 minutes. Towards the end add mushrooms and Enoki Mushrooms
