Quinoa Burrito Bowl
I've been making this Quinoa recipe for years now, and its always been yummy, filling, and so easy to make. I wanted to add something a little extra to my all time favorite Quinoa and Black Bean recipe, so I added chicken, and a side of warmed tortilla. It was was yummiest Burrito Bowl I've ever had, and probably the healthiest!
Quinoa and Black Beans Recipe
Ingredients- 1 Teaspoon Vegetable Oil
- 1 Onion, chopped
- 3 Cloves Garlic, chopped
- 3/4 Cup Quinoa
- 1 1/2 Cup Vegetable Broth
- 1/4 Teaspoon Cayenne Pepper
- Salt and Pepper To Taste
- 1 Cup Frozen Corn Kernels
- 30 Oz Canned Black Beans, Rinse and Drained
- 1/2 Cup Chopped Fresh Cilantro
Directions
- Heat oil in a pan on medium heat, cook onion and garlic, saute until light brown for 10 minutes.
- Add quinoa, vegetable broth, add cayenne pepper, salt, pepper. Boil, then reduce the temperature to a simmer until quinoa is cooked, 20 minutes.
- Add corn, cook for 5 minutes. Add in black beans and cilantro.
Taco Seasoning Recipe
Ingredients- 1/8 Teaspoon Cayenne Pepper
- 1 Teaspoon Chili Powder
- 1/2 Teaspoon Paprika
- 1/3 Teaspoon Chicken Bouillon Granules
- 1/8 Teaspoon White Sugar
- 1 Lb Boneless Skinless Chicken Cubed
- 1 Tbsp Oil for Cooking
Directions
- Combine seasoning ingredients into a bowl. Season onto 1 lb chicken that has been cut into cubes. Cook on a pan until cooked.
