Quinoa Burrito Bowl
I've been making this Quinoa recipe for years now, and its always been yummy, filling, and so easy to make. I wanted to add something a little extra to my all time favorite Quinoa and Black Bean recipe, so I added chicken, and a side of warmed tortilla. It was was yummiest Burrito Bowl I've ever had, and probably the healthiest!
Quinoa and Black Beans Recipe
Ingredients

  • 1 Teaspoon Vegetable Oil
  • 1 Onion, chopped
  • 3 Cloves Garlic, chopped
  • 3/4 Cup Quinoa
  • 1 1/2 Cup Vegetable Broth
  • 1/4 Teaspoon Cayenne Pepper
  • Salt and Pepper To Taste
  • 1 Cup Frozen Corn Kernels
  • 30 Oz Canned Black Beans, Rinse and Drained
  • 1/2 Cup Chopped Fresh Cilantro
Directions
  1. Heat oil in a pan on medium heat, cook onion and garlic, saute until light brown for 10 minutes.
  2. Add quinoa, vegetable broth, add cayenne pepper, salt, pepper. Boil, then reduce the temperature to a simmer until quinoa is cooked, 20 minutes.
  3. Add corn, cook for 5 minutes. Add in black beans and cilantro.

Taco Seasoning Recipe
Ingredients
  • 1/8 Teaspoon Cayenne Pepper
  • 1 Teaspoon Chili Powder
  • 1/2 Teaspoon Paprika
  • 1/3 Teaspoon Chicken Bouillon Granules
  • 1/8 Teaspoon White Sugar
  • 1 Lb Boneless Skinless Chicken Cubed
  • 1 Tbsp Oil for Cooking
Directions

  1. Combine seasoning ingredients into a bowl. Season onto 1 lb chicken that has been cut into cubes. Cook on a pan until cooked.

Cook on a pan until cooked with 1 tbsp of oil


Combine Quinoa and Chicken Together into a bowl, serve with a warmed tortilla.
