Hello Kitty Moon Cakes (Midsummer Autumn Festival)
My poor and neglected blog. It's been like two months since my last post. Usually I've been able to consistently upload a blog along with my videos, but I got lazy~ Here's a post for Hello Kitty Mooncakes! It's a bit late since I've made these for the Mid Summer Autumn Festival.
Recipe For Moon Cakes:
- 120 Grams Cake Flour
- 70 Grams Maple Syrup
- 30 Grams Vegetable Oil
- 4 Grams Water
- 1 Egg
- 1 Tablespoon Water
- Some Water for Spraying
- Premade Red Bean Paste
Directions:
- In a bowl add cake flour, maple syrup, oil, water. Stir this together with a spatula until no white spots remain. Cover with a damp cloth and let it rest for 45 minutes.
- If you're using molds that are meant for 50 grams each, divide the dough each into 15 grams of dough. Shape them into balls.
- Divide the red bean paste into 35 grams each and shape them into balls.
- Flatten the dough, place a red bean paste in the center and wrap it up.
- Dust the mold with some flour. Place dough and filling in mold seam side on the outside. Lightly dust the table. Very firmly press down on the mold and release the dough.
- Spray water onto the dough to prevent any cracking during the baking process.
- Bake for 10 minutes on 350°F
- Remove from oven cool 5 minutes
- Make an egg wash with 1 egg and 1 tbsp of water, whisked together.
- Lightly egg wash the cakes with a brush. Return to the oven until golden or 10-12 minutes.
Notes:
Substitution: Original recipe calls for 4 grams alkaline water, 70 grams golden syrup, 30 grams of sesame oil. Cake flour can be Hong Kong flour. The maple syrup can also be honey instead.
