PUMPKIN CHEESECAKE RECIPE
I'm not a big fan of cheesecakes, my channel/blogs have a lack of a cheesecake in them. But this pumpkin-cheesecake recipe was AMAZING. A layer of pumpkin pie/cheesecake with a graham cracker crust! These will not disappoint~ I even made them into mini cheesecake so it would be better for serving to guests for the holidays~
PUMPKIN CHEESECAKE RECIPE
- 1 (8 OZ) PACKAGE CREAM CHEESE
- 1/4 CUP GRANULATED SUGAR
- 1/4 TEASPOON VANILLA EXTRACT
- 1 EGG
- 6 MINI GRAHAM CRACKER CRUST (KEEBLER)
- 1/4 CUP PUMPKIN PUREE
- 1/4 TEASPOON GROUND CINNAMON
- 1 PINCH GROUND CLOVES
- 1 PINCH GROUND NUTMEG
WHIPPED CREAM RECIPE
- 1/2 CUP HEAVY CREAM
- 1 TABLESPOON POWDERED SUGAR
- 1 TEASPOON VANILLA EXTRACT
Directions
- In a bowl add in the cream cheese, sugar, vanilla extract and stir until smooth. Add in the egg and stir.
- Place 6 mini premade graham cracker crust on a half sheet pan.
- Take out 1/2 of the batter and pour it evenly into each pan
- In the bowl with the remaining batter add in pumpkin puree, cinnamon, cloves. and nutmeg. Stir this together. Pour this evenly over the cheesecake batter.
- Bake for 20-23 minutes or until it sets. You can tell by gently shaking the pan to see if the cheesecake moves.
- In a mixer with a whisk attachment pour in 1/2 cup of cold heavy cream, add in 1 tbsp of powdered sugar, and 1 teaspoon of vanilla extract. whip until stiff. Top over pumpkin cheesecakes, or have it on the side.
