Quick Beef and Collared Greens Stir Fry







I think I got my mom into YouTube. Everyday she's been dragging me back into the kitchen to film the next thing for the channel. I really love having my mother's homemade recipes onto video. I grew up eating all these recipes, and they're just full of vegetables and they're so quick to make. I remember coming home starving from like school and she'd whip these things up in minutes.  

Quick Beef and Collared Greens Stir Fry

Ingredients
  • 13.5 oz thinly sliced beef
  • 2 oz sliced scallions
  • 4 cloves garlic minced
  • 1 tablespoon granulated chicken soup
  • 1 tablespoon white sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1/2 tablespoon oyster sauce
  • 1/2 chopped onion
  • 20 oz collard greens (leaves and stems separated and cut into 1 inch pieces)
  • 1/3 cup water
  • Oil for stir frying
Directions
  1. In a small bowl prepare the sauce by mixing together the 1 tbsp granulated chicken soup, 1 tbsp sugar, 1 tbsp soy sauce, 1 tbsp fish sauce, 1/2 tbsp oyster sauce, and set this aside. 
  2. In a large wok heat up oil on high heat and add in 4 cloves of minced garlic and sauté until golden. Add in the 13.5 oz thinly sliced beef, cook until no longer pink. Add in the prepared sauce and cook until fat rises and the sauce begin to lift and become bubbly. 
  3. Add in only the stems of the collared greens, chopped onion, and 1/3 cup of water. Cover it with the lid and cook for 1 minute. Open the lid and add in the leaves of the collared greens, cover again and let it cook for another minute. Open the lid again and stir in the sliced scallions. Remove from heat and serve.
