Victorian Christmas Fruit Cake Recipe




This recipe is a tradition for me to make every Christmas morning. I bake them into little tins and pass them out to my relatives as little gifts. They rave and expect this every year now! Its super moist, makes me super energized, you could probably hear it in my voice in the video lol.

FRUIT CAKE VIDEO TUTORIAL





Fruit Cake Recipe

Yield 5 small bread tins (5.6 x 3.3 x 1.9 inches)

10 oz maraschino cherries
3/4 cups sugar
8 oz can of pineapple
12 oz ready-to-eat dried apricots
2 oz pecans
2 grated lemons
6 oz raisins
6 oz dried cranberries
9 oz all purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
9 oz caster sugar (granulated works too, and you can blend it until caster)
9 oz softened unsalted butter
3 oz almonds
5 eggs
